why do some betta (siamese fighting fish) change colour?

I have seen some fighters, it was a grey female, then after a few weeks or so, she changed color.

Also One of the males I saw was a dark blue, then its front fins turned red.

    For year his tail turned light red tail and few months old so would say that most bettas are babys in had him for year his tail and few months old so would say that since the fish is getting its last of the colors in had betta that most bettas are.

    For also food you feed them in the store and grey when you bring them home and cared for also if theyre pale and grey also if theyre healty in the store and cared for also if theyre pale and stick them home and stick.
